I had a quinoa salad from the salad bar at Whole Foods the other week. It was so good, I had to try making it on my own. I found a few ‘copycat’ recipes online and then made my own version. It took me a few tries to get the dressing like I wanted, but my friends and neighbors helped me eat the trials with no complaints!
Coconut Mango Quinoa Salad
Dressing: whisk together in small bowl
½ T Organic, unfiltered apple cider vinegar
½ T Organic, extra virgin olive oil
½ T pure maple syrup
½ juice of 1 lime + zest
Salad: Mix together, top with dressing, and enjoy!
2C cooked quinoa
1 mango, diced
1 organic red bell pepper (or 4 mini peppers) any color works, but the red looks pretty 😊
¼ of a small red onion, diced
½ C organic, unsweetened coconut flakes
½ C chopped/smashed/broken dry roasted cashews
Salt to taste
